Baked Brie with a Maple Cranberry Sauce
8 oz. fresh cranberries
Juice of 3-4 tangerines
½ cup of maple syrup, to taste and to sauce consistency
A few dashes of cinnamon
Dash of sea salt
1 large wheel of Brie
Preheat the oven to 350 degrees.
In a medium saucepan over medium heat, combine the cranberries, tangerine juice, maple syrup, cinnamon, and salt. Stir frequently until the cranberries have popped and cooked down long enough to create a sauce-like consistency. Sneak a taste test and add extra maple syrup if you want some more sweetness.
Shave off the top of the rind of Brie and place it onto an oven-safe serving dish (if you use an oven-proof dish, you won’t have to worry about transferring it to a serving dish – easy peasy and no messes). Spread the cranberry sauce over the top of the cheese. Bake for about 15 minutes or until the cheese gets melty and you can see the wheel of Brie is heated through. Keep an eye on the Brie while it’s in the oven. I have melted Brie into a pool of cheese many, many times and different kinds of Brie melt more easily than others.
This is a wonderful dish to bring for a large group. You can find a large wheel of Brie at Sam’s Club or Costco and bags of fresh cranberries are so easy to find this time of year. The creaminess of the Brie is a great match for the tart cranberry flavor and the cinnamon gives it a holiday feel. Toasted walnuts would be a great addition to the cranberry sauce. Also, feel free to use the juice from oranges if you don’t want to use tangerines.
I loved this recipe because I could prep it ahead of time and it was easy to transport. I made the cranberry sauce the night before. When I arrived at the Christmas party, I shaved the top of the wheel of Brie off, topped it with the cranberry sauce, and popped it in the oven. I love recipes that I don’t have to slave over just before leaving to go to a party.
This recipe is quick, easy, includes lovely holiday flavors….and who doesn’t like cheese?!
