Okay, since we are on the topic of Thanksgiving…lets talk sweet potatoes! These little spuds don’t get as much appreciation as they truly deserve! Side dishes during the holiday should have as much flavor and pizzazz as the main dish. Who said the glazed bird had to steal the show? With a little embellishment to bring out that natural sweet flavor, these sweet potatoes are a show stopper!

Not only are these spuds easy on your bank account during the holiday season; they are healthy and loaded with pure, whole food goodness. They are rich in the antioxidant beta carotene along with vitamin C, B-complex, iron, and phosphorus. What does that mean to you? Body rockin’ immune function! They are also a great source of fiber and are nice and gentle on your stomach. Not only will your taste buds be pleased with this addition to a meal, your body will thank you for the healthy “fuel” you are providing it. I bet I can guess your next question. So how are you going to cook with it? I have an amazing, must-try recipe to share with you.

Dreamy Vanilla Sweet Potatoes

-4 medium sweet potatoes

-olive oil (to coat the pan)

– 4 oz. cream cheese, softened

-1/2 cup butter, softened

-1/4 cup pure maple syrup

-1 squeeze of honey

-1 Tbsp pure vanilla extract

– Dash of sea salt

– Dash of pepper

– 6-7 pieces of crispy (nitrate free, if possible) bacon, crumbled

This makes about 6-8 servings

Preheat the oven to 400°. While it is heating up, coat your sweet P’s in an oil of your choice and wrap with aluminum foil. Bake on middle rack for 1 hour. Remove and let cool so you can handle with out playing “hot potato”. Scoop all of the delicious potato out of the skin into a large mixing bowl. Use a hand held mixer, or my favorite – the hand held immersion blender! Once creamy, add all of the remaining ingredients, except bacon, then blend until smooth and creamy. You can then place all of the potatoes in an oven safe baking dish or even individual ceramic ramekins. Sprinkle with the crispy bacon pieces and place back in oven at 350° until warmed through, which will be about 5-10 minutes.

This recipe is the perfect blend of sweet and salty flavors. You will be in love with the creamy texture of this dish…not to mention the taste bud sensations! I hope you think about adding this dish to your holiday menu; it’s a sure crowd pleaser at my table!
