Granola is one of those recipes where you can make it a zillion times and never make the same recipe twice. You can always put a little twist on it and end up with a new flavor combination. I love standing in the bulk section of a store and eyeing up what little food treasures I want to add to my granola creation. Yup. Total Nerd.
I had my eye on the bulk dried berries section and was inspired to make a bear worthy granola. It takes a few ingredients, but don’t let that scare you away. You literally mix everything in a bowl and pour it onto a baking sheet for the oven. Boom. Homemade Granola.
3 cups rolled oats (not the quick kind)
1 cup walnuts, chopped
½ cup almonds, chopped
½ cup dried cherries, chopped
1/3 cup dried blueberries
3 tablespoons butter, melted
1 tablespoon maple syrup
½ tablespoon unsulfured molasses
2 teaspoons chia seeds, ground
2 teaspoons flax seed, ground
Pinch of sea salt
Preheat your oven to 300° and line a baking sheet with parchment paper. Mix all of the above ingredients in a large mixing bowl and pour onto your lined baking sheets. Evenly spread out the granola mixture and bake for about 30 minutes. You’ll want to stir the mixture about half way through the cooking process. It will be ready once it takes on a nice golden brown color.
Let the granola cool completely before storing it in an airtight container. You’ll want to break it up with your hands so it’s not stuck in a huge granola sheet.
This granola mix is perfect for a stand-alone snack or added to your favorite yogurt. It’s crunchy, sweet, and filling. You’ll just have to watch your back for any bears that are looking for a taste! Enjoy!
