Coconut Devonshire Cream

One of our most favorite treats that Joanna and I make together are crumpets topped with Devonshire cream and lemon curd. It’s the perfect combination of tasty carbs, creamy goodness, and crisp lemony curd.
A craving for this tasty treat came over me the other day while I was shopping at Trader Joe’s. But they don’t carry Devonshire cream. That wasn’t going to stop me!
2/3 cup coconut cream (they carry cans of it at Trader Joe’s) ½ tsp vanilla 2 Tbsp half and half Pinch of salt Combine all ingredients in a bowl with the whisk attachment. Whisk together until soft peaks form.
This is a lovely cream to use like we do with crumpets and lemon curd, but it’s also a great topping for fruit, scones, or can really use it any way that you would use whipped cream.
