Arugula & Apple Salad

I am so excited and so ready for spring to make its appearance. It’s that time of year when you can just feel it in the air and you wish you could just pull it to you faster. When you realize that just isn’t possible, the next best thing is to make springy foods…of course!
We were out to dinner for a friend’s birthday the other week and I had a delicious spring tasting salad that I knew I must re-create at home. The flavor combinations were spot on and I loved all the texture and “crispness” the salad held.
Salad:
4 big handfuls of arugula
1 large green apple, cut into sticks
1 medium sized fennel bulb, cut into thin strips (fronds reserved for garnish)
1 handful of almonds, roughly chopped
1 tbsp. sweet onion, diced
¼ c. parmesan cheese, shaved
Dressing:
¼ c. Olive oil
2 tbsp. apple cider vinegar
Sea salt & cracked black pepper, to taste
Mix all of your salad ingredients in a large bowl. Whisk your dressing ingredients together and just before serving, toss into salad until combined well. Top with fennel fronds if reserved.
This recipe is awesomely simple and really tasty. It packs a punch with all the flavor combinations of peppery arugula, sweet fennel, tart crisp apples, and sharp cheese. We served our salad as a side with a chicken breast, but it could definitely stand on its own. I’d love to try mixing in some fresh watercress next time. I think that would taste great with it and add to the fun texture mix. With spring approaching, pea shoots would also fit well into this salad. Yum!!
