Easy Cast Iron Skillet Nachos | Whole Green Love

Who doesn’t love a big ‘ol plate of cheesy nachos? Now that I have created this recipe once, I can see some nacho dinners in our future. They are filling, cheesy, and contain some veggies and beans. Healthy, right?


Easy Cast Iron Skillet Nachos

1 lb ground beef

1 small onion, chopped

2 Tbsp taco seasoning

1 cup frozen sweet corn

1 can black beans, rinsed and drained

tortilla chips

16 oz jar of salsa

Shredded cheese (raw cheddar, pepper jack, Mexican blend, whatever you like!)

Sour cream

Preheat oven to 350°F. Combine ground beef and onion in a pan over medium high heat and cook until the meat is browned. Stir in taco seasoning, corn, salsa, and beans and heat through. Remove from heat.

In a cast iron skillet, layer tortilla chips on the bottom of the pan. Spread the ground beef mixture over the top of the tortilla chips and top with shredded cheese (however much you’d like!). Put the skillet in the oven and bake for about 5 minutes, until the cheese is nice and melty.

Add toppings to your liking!

The cast iron skillet is great because it keeps this dish hotter then a normal pan when you take it out of the oven. The cheese stays melted for longer and nachos are always delicious when served hot. If you are looking for cheese that is a little saucier, give these recipes a try!
