I was inspired this weekend to make a wintery fruit salad. I had been perusing through Pinterest and found a gorgeous picture of a Winter Fruit Salad with Lemon Poppyseed Dressing from Halle Cottis at Whole Lifestyle Nutrition. It not only looked divine, but I could just imagine how juicy and citrusy it would be.

In the wintertime, I feel like I sort of jump off the fruit boat and will merely have it as a side here and there. We’ll have an apple with lunch or a cut up orange with dinner…nothing to write home about. I saw this winter fruit salad and thought to myself – hey…I can jazz it up too! Winter doesn’t mean you have to pack up the fruit salad, you can just reinvent a wintery creation.

I used what I had on hand at our house and it turned out delish!

This salad turned out so good. Not only is it simple to throw together, but the flavor combination between the citrus, maple, and warmth of the ginger really made it a hit at our house.

This salad was a reminder to me that it doesn’t have to be mid summer or fall for me to enjoy a delicious fruit salad. It tastes even better the next day after it has marinated overnight! The citrus juice also helps to slow down the browning process of your apples and bananas, which is nice.

Thank you for the inspiration, Halle! It was a great reminder!
