Chicken, Lentil & Lemon Soup

Chicken, Lentil & Lemon Soup |

I haven’t been able to get enough of warm soup lately. I’m constantly throwing together a pot of homemade stock and other healthy soup goodies. Not only is it easy to mix and match a soup creation, but you can use up ingredients that you have leftover, you only have one pot to clean up after, and you have meals for the next few days. Heck you can even double the batch so you can freeze some for a busy week down the road when you don’t have time to do all the prep work.

My coworker was telling me about this yummy lemon chicken soup she makes, so I improvised and came up with this delicious lemony chicken creation.  You can’t help but feel better after slurping down a warm bowl of this on a wintery night!

This soup is not only delicious, but is perfect if you feel a cold coming on. Between the bone broth, lemon, and pepper flakes, you’ll be feeling better in no time! My recommendation is to make extra so you can freeze some for later too! Nothing beats being able to easily thaw some tasty, healthy soup. As a note though, you don’t need to be feeling sick to enjoy this. Ha!

What pots of soup have you been making this winter?
