Turkey, Avocado, & Mango Salsa Panini

For all you sandwich lovers out there – get your panini press fired up! Put this sandwich on your docket for the weekend! We go through waves of sandwich making in our house. We’ll have them for a meal every day for almost a week and then POOF, we don’t have another sandwich for quite a while. Well, our panini press is hot and this sandwich is going to call out to your taste buds. I’m the kind of person who goes to bed and will have food revelations as I fall asleep…I know…nerd alert! I’ll be drifting off and all of the sudden, new flavor creations pop in my head and I’ll try grilling the recipe ideas into my mind as I get swept away into slumber.

This panini recipe popped into my head the other night and I’m glad I was able to remember it! So delish! The only thing that takes a little prep for this sandwich is the mango salsa, and I must say it tastes better after the flavors have a chance to marry overnight. When you are ready to make your panini the next day, all you have to do is throw it together and panini up that bad boy!

Mango Salsa

1 Poblano pepper, diced into small pieces

1 mango, diced into small pieces

1/3 0f a medium sized jalapeño, minced

1 Tbsp. onion, minced

Small handful of fresh cilantro, roughly chopped

Juice of one small lime

Sea salt & pepper to taste

2 slices sourdough bread

2 slices of shaved turkey

1 slice of mild cheese (I used muenster cheese, but you could really use any cheese you have on hand)

4 thin avocado slices

1 heaping spoonful of mango salsa

½ leaf of romaine lettuce

Butter for grilling the sandwich

For your mango salsa, chop and prepare as described above. I finely minced the jalapeño and onion so that it would easily incorporate with the rest of the ingredients. I like to avoid getting a bite full of spicy onion or hot pepper. It really does taste better if you give it time for the flavor to develop, so try making it the night before. You can always adjust the heat of this salsa by adding more or less of the hot pepper.

You’ll want to butter each side of the bread that will be touching the panini press. You don’t have to butter your bread, but who wouldn’t?! Layer your turkey, avocado, mango salsa, lettuce, and cheese. Close off your sandwich and grill until golden brown and your cheese has melted. Be careful to not have your avocado squirt out the sides! They can be slippery little buggers. This sandwich will get a little messy, but it is oh-so worth it!

It has great crunch provided by the poblano pepper and romaine lettuce, but has smoothness from the cheese and avocado. You’ll also get sweet, savory, and spicy notes that hit your palate from the mango, turkey, and hot pepper. A complete flavor explosion in your mouth if you ask me… and it takes under 10 minutes to get on the dinner table.
