A special thanks to Frontier Natural Products Co-op for the delivery of goodies to our door this week! They generously provided us with Simply Organic Madagascar vanilla, cinnamon, ground nutmeg, ginger, and ground cloves. We also received Frontier Natural Products Co-op chili powder (chili season is finally here!). For someone who is completely obsessed with anything related to the warm tastes and smells of Fall spices, this was the perfect delivery. Not only does the Madagascar vanilla taste divine, but through Simply Organic’s Well Earth program a $40,000 donation was made to their Madagascar vanilla partner, which helped make fresh and healthy water accessible to thousands of people in 38 villages of that region. Simply Organic is simply awesome.
Initially, when I was thinking of what to whip up with these spices, my mind ran to pumpkin bread, homemade pumpkin spiced lattes, and apple crisp. Pinterest is bombarding me with the delightful goodness of Fall flavors these days. I thought I would try something different though. When I went in the kitchen last night to get my breakfast prepared for the morning, I looked around for fruit to add to my usual yogurt and granola. No such luck in the fruit department, but we were definitely long on pumpkin because I am a complete hoarder at the grocery store when those shelves of canned pumpkin are full. Using pumpkin puree, vanilla, and many of the spices we received from Frontier Natural Products/Simply Organic, I created my new Fall breakfast favorite.
Pumpkin Molasses Parfait
3 Tbsp canned pumpkin puree
1 cup plain yogurt
1/2 tsp blackstrap molasses (or less, depending on your taste for molasses)
1/4 tsp vanilla
1/8 tsp cinnamon
1/8 tsp ground ginger
1/8 tsp ground nutmeg
1 tsp honey (optional)
Whisk all ingredients together. My first time through on this recipe, I just stirred the ingredients. It tasted good, but I like how a good whisking incorporates the ingredients a bit better and keeps the consistency smooth. Top the pumpkin and yogurt mixture with your favorite granola and a small handful of dried cranberries.
This is the perfect fall breakfast treat! It’s loaded with good stuff like vitamin A, vitamin C, and fiber from the pumpkin and protein and calcium from the yogurt (for this recipe, the thicker the yogurt is that you buy, the better. Whole milk yogurt or bust). The blackstrap molasses add a serious punch of nutrition with iron, calcium, and magnesium. The molasses also adds a bold sweetness and the flavor of Fall. No need for added sugar. I left out the honey, but I know some people like their yogurt on the sweeter side. This yogurt parfait is like a giant molasses cookie/pumpkin pie slice in a bowl. Delightful.

Oh man, there are so many wonderful Fall recipes and ingredients! Squash, pumpkin, and cinnamon are definitely high on the list – so many different combinations to try with these. Of course the use of ‘simply organic’ ingredients is always a plus!

My favorite fall recipe would have to be a butternut squash/baked apple soup. I’m sure I can make that with a touch of the Simply Organic vanilla and lots of the cinnamon! Great giveaway!
Squash soup is one of my fall favorites…& it is Simply Organic! Topping soup with simply organic homemade kale chips is yummy!
I love pumpkin! I just made my first batch of pumpkin butter in the crockpot and it made the house smell divine!! I also love Simply Organic spices and I have all of them. I used vanilla, cinnamon, cloves, Ginger, cardamom, nutmeg and a dash of white pepper.
Pumpkin quinoa bread made with Simply Organic Vanilla is wonderful with a mug of cider for a fall breakfast!

My favorite Fall food is homemade applesauce with dried cherries and Simply Organic spices and vanilla. It is best to use a combination of crisp apples (like Granny Smith) and “melting” apples (like Gravenstein), or better yet, heirloom apples from someone’s backyard.
My favorite fall recipe is salmon loaf made with Simply Organic Basil and Oregano added into the recipe. Here it is:
1 can of salmon, use red sockeye if possible
1/2 cup or non-fat organic milk or organic unsweetened almond milk
3 stalks of celery minced
4 mushrooms sliced
1 carrot minced
1 large shallot minced
1/2 cup of Extra Virgin Olive Oil
1 1/2 tsp of Simply Organic Oregano
1 tsp of Simply Organic Basil
1/2 tsp of ground peppercorns
1/4 tsp of sea salt
2 extra large organic eggs beaten
1 3/4 cups of rolled oats
Saute the shallot, celery, carrot and mushrooms in a pan until translucent.
Drain the can of salmon and rinse to remove salt that it is canned in. Remove any visible. bones.
Combine all the ingredients as you would if you were making a meat loaf.
Place in a large oiled loaf pan.
Cook at 375 for 1-1/2 hours. Check for doneness. Some ovens will bake the salmon loaf quicker than others. Check by inserting a knife into the center of the loaf. If it comes out clean it is down. There should also be a nice brown crust to this as well.
****You could also add 1 tsp of a good hot sauce to this mix, such as Louisania Hot Sauce to spice it up even more.
I serve this with asparagus.
You could also make a White Sauce for this and serve it along with slices of the Salmon Loaf.
The oatmeal gives it a very nice texture and complements the salmon well.
