If you can’t tell, Laura and I have been WAY into the Fall spirit. When a season like Fall only comes for such a short time every year you really need to embrace it. That being said, I was on a mission to make a fabulous Fall salad to fit my mood. I have made this recipe three times this past week and I’m sure I will probably end up making it this weekend as well! You really can’t beat a salad that fits the bill for both sweet and savory. Enjoy!
Fall Apple & Bacon Salad
- 3 heaping handfuls of mixed greens (I love having different texture & flavors in my greens)
- 1 heaping handful of cubed apple (I found some lovely local Cortlands at the grocery store)
- 1 handful of cubed sharp cheddar cheese (Obviously, I found some local cheese for this made right in Germantown,WI.)
- 1 small handful of thinly diced red onion
- 1 small handful of chopped almonds
- 6 slices of thick cut bacon (cooked to crispy perfection & broken into bite size pieces)
- Extra virgin olive oil & apple cider vinegar in a 3:1 ratio
- Sprinkle of nutmeg (I love my Simply Organic nutmeg…so good!)
- Sprinkle of cinnamon
- Drizzle of honey (I have this great local wildflower honey from Hales Corners…Yum!)
- Salt and pepper to taste
Mix the first six ingredients of your salad in a large bowl. You’ll want to use a smaller bowl to combine your last 5 ingredients to make the dressing. I like to use a small whisk to get my dressing to really emulsify and mix together. I always like to add a small amount of dressing to my salad, then give it a good mix…you can always add more dressing if it seems to dry. As a side note, you could sub in maple syrup for the honey too. It would be a lovely flavor to have in the dressing as well.
This salad screams Fall! It is so sweet and savory you won’t know what to do with yourself. I. Am. Addicted. It truly is that good. When you mix fresh, simple, and real ingredients, you just can’t go wrong. This flavor combination will get you in the Fall spirit if it has yet to find you.
You could even hit up an orchard this weekend so you can make this salad for dinner with the fresh apples you picked earlier in the day. I found this awesome website that helps you locate orchards in your area. It takes all of the guesswork out of knowing where to go and who is picking what apples. Easy peasy.
