Avocado Chocolate Pudding

I feel like every recipe I post about on this blog is a dessert. Joanna is really good at the savory stuff and I must just gravitate towards the sweet treats. Mmm. At least the two of us can offer a good balance!

So, this recipe is kind of a cool one because there is nothing better than sneaking healthy ingredients into recipes. What is not cool is when that comes at a price in the taste and texture department. Know what I mean? For example, as much as I’d love to make it work, using ALL whole wheat flour in breads, muffins, and cookies just doesn’t always give me what I’m looking for in a bakery item. It’s all about balance.

So when I heard about a recipe for chocolate pudding from a co-worker, with the main ingredient being avocado, I was intrigued. Here is the recipe:

1 ½ avocado, cubed

3-4 tsp cocoa powder

Just less than 2 Tbsp honey

½ Tbsp vanilla

Put all of the ingredients into your food processor (or Baby/Magic Bullet) and blend it up! This dessert is best served cold, just like regular chocolate pudding.

Feel free to experiment with dark cocoa powder for a little extra health benefit. To thin the recipe out a bit and get some extra calcium, you can add a splash of almond or regular milk. If you don’t have honey on hand, try using agave nectar. If you are using honey, be careful with the type of honey you use. I made my first batch with buck wheat honey, which is great for some things but too heavy and strong tasting for this pudding. I used a spring flowers honey for the second batch, which turned out fabulous.

You’d think that with a dessert recipe based with avocado, something has to go wrong. I was delightfully surprised at how a blended avocado truly gives you the texture of pudding. Feel free to up the chocolate or sweetness factor by adjusting the other ingredients. For added goodness without more sugar, think about adding a sprinkle of cinnamon.

This recipe is perfect for people who can’t tolerate dairy. It’s also a great treat to give kids who want a little chocolate treat and are old enough to eat honey. Nothing like the healthy fats from that avocado to give their growing brain a boost!

You know what would really make this sweet recipe shine? A little sprinkle of sea salt to top it off. Om nom nom…

    You could also add a banana if you like it sweeter. And if you want to adjust the consistens try adding some type of milk, almond or coconut milk fir example. It tastes great!
