Pumpkin Pie Parfait

So, the other day when I was coming off of my call shift at the hospital, I was thinking about my bed. Well, I was thinking about food and then bed, to be honest. I decided to stop at Whole Foods on my way home to pick up a few items for the rest of the week.  I also wanted to figure out something simple to eat before I made my way to bed. Now, it may have been because I was lacking in the sleep department, but I was extremely indecisive about what I wanted for dinner. The only thing that I REALLY wanted or felt like was pumpkin pie…so I thought, why not?!  There was no way I was going to make a homemade pumpkin pie, let alone stay awake while it was baking. I improvised and threw together this tasty little pumpkin pie parfait. I highly recommend this treat for all the pumpkin lovers out there!

Pumpkin Pie Parfait

2 cups pure pumpkin puree

2 cups heavy whipping cream

5 Tbsp powdered sugar

3 tsp pure vanilla extract

1 tsp cinnamon

½ tsp nutmeg

1 handful of crumbled honey graham crackers

I loved this recipe because it was so easy to throw together and had that awesome, creamy pumpkin pie taste without too much effort.  I used my Kitchen Aid mixer to make my whipped cream first, but a hand held mixer would do the trick as well. Mix your cream with 4 Tbsp powdered sugar and 2 tsp of the vanilla. Whip together until you have soft and fluffy whipped cream.  While it is whipping up you can mix your pureed pumpkin, 1 Tbsp powdered sugar, 1 tsp vanilla, cinnamon, and nutmeg until incorporated. Fold in about 1 cup of the whipped cream into your pumpkin mixture. Feel free to add more whipped cream or spices to taste so it creates that perfect pumpkin pie flavor.

To put it all together, sprinkle a few of the graham cracker crumbs in the bottom of your serving dish. Top with the pumpkin mixture, a few more graham cracker crumbs, and whipped cream. Voila! Pie perfection in a cup, my friends. I used a new pumpkin product from Fig Food Company. I loved it not only because it was delicious, organically grown pumpkin, but also because their packaging material is BPA free. Score! I’ll take my pumpkin without toxic chemicals please. I also find it encouraging that this company keeps in mind the interest of both healthy people and a healthy environment. There is much to be said about supporting companies and organizations that have a cause greater than themselves.

I hope you like this pumpkin parfait as much as I did. I even found it tasted better the next day after it was chilled in the refrigerator. It was perfect to divide up into individual containers for a treat later in the week. Pumpkin is one of my favorite flavors and I think it’s a shame that it’s usually only thought about in fall.
