Baked Pumpkin Pie Oatmeal

As I’m writing this, I’m baking my new favorite weekday breakfast: Baked Pumpkin Pie Oatmeal. These days, with a baby in the house and adjusting to being back at work, mornings can be pretty chaotic. It seems like it’s always a mad dash out the door in the morning to get to work on time. I’m guessing I’ll just have to get used to that. For me, easy (and healthy) weekday breakfasts are a must. I’ve talked before about my go-to breakfast of fruit and yogurt with granola, but when I was out of granola ingredients the other day; I went on a recipe search. I wanted something I could easily whip up on a Sunday night that would take care of my morning meals until we went grocery shopping again.

We’ve also been trying to reign in our grocery spending, so I was super pumped when I found the blog Budget Bytes. Beth is a woman on a mission to save money and eat well. Have I found my soul mate? Well, I’m married to my soul mate, but maybe you can have two? I’ve been stalking her website ever since and have enjoyed every recipe we’ve tried. (Check out her: Chorizo & Sweet Potato Enchiladas, Spinach Mushroom & Feta Crustless Quiche, and the Pizzadillas – Yum!) I also recently turned her Chai Spiced Simple Syrup into a Thank You gift for someone…I’ll post on that soon. Do I sound completely obsessed?

recipe will get you through the week. Plus, you can’t beat eating breakfast for a whole week on $0.46/serving. It’s quick to whip up and who can get enough of that pumpkin flavor this time of year….or any time of year for that matter?

Just a tip: Since I bake the oatmeal on Sunday night to have it ready for the whole week, I add a splash of milk when I reheat it to maintain the moisture in the oatmeal.
