Pumpkin Seed Perfection

I haven’t carved Halloween pumpkins in a few years and decided it was the year to bring back the tradition. We usually decorate our porch with some pretty multicolored gourds, but haven’t utilized our artistic carving ability in quite some time.  I have been missing out! I totally forgot how fun it is to carve pumpkins!

What do I maybe love more than pumpkin carving? Roasting those tasty little pumpkin seeds! I know most people get a sweet tooth (trust me, I get it too), but I crave a salty little snack any day over something sweet. These seeds are the perfect crunchy snack to fix that craving!

Roasted Pumpkin Seed Perfection

-       Pumpkin Seeds

-       Sea Salt (I love my pink Himalayan sea salt)

-       Garlic Powder

-       Olive oil Spray

-       Butter

All I did was line a baking pan with parchment paper and gave it a good spray of olive oil. After you clean your pumpkin seeds (I like to use a colander under running water), spread your seeds out evenly on the lined bake pan. Give your seeds another spritz of olive oil to coat them. I wanted them to have a little buttery taste (come on, who wouldn’t?), so I took a sliver of cold butter and put the little pieces on top of the seeds. Lastly, I seasoned them up with my sea salt and garlic powder. I had been all set to use some fun and funky spice flavor mixes, but my taste buds were calling for a tasty traditional seed, so I had to listen!

I slow roasted them for 2 hours in a 300°F preheated oven. I knew they were ready when they had a golden color to them and I could smell them throughout the whole house. Yum! I turned them about 3 times during the baking process to make sure both sides got nice and golden. You can’t keep your hands off these little guys! They are savory and crunchy…a perfect snack!

Take advantage of the after Halloween pumpkin sales and scoop up those gourds! They may not end up lit on your doorstep, but your belly will appreciate the seedy snack! Pumpkin seeds are packed with protein to help you feel full, phytosterols which help lower cholesterol, healing properties that fight inflammation in the body, not to mention they are full of iron, vitamin K, zinc, magnesium, manganese, and phosphorus. Yes to all of that goodness! The next time you feel like popping a salty potato chip in your mouth, give pumpkin seeds a chance! You’ll love their mild flavor and crunch. You could even season them with different spices if you are looking to liven them up a bit.
