Everything Granola

Looking for something to bake this weekend? How about some fantastic granola?! This little treat is sure to please your taste buds and satisfy those hunger pains. I don’t know how it couldn’t with all the flavors that are happening in this recipe I whipped up! Granola is quick and easy to make and tastes much better than any store bought variety. If you put these granola clusters in an airtight container you’ll have an oat-y snack for up to 3 weeks! Lets get started!

Everything Granola:

4 cups whole rolled oats

2 cups unsweeted coconut shavings

2 cups nuts (walnuts, almonds, pecans)

2 Handfuls dried cranberries

½ cup candied ginger

8 whole dates, diced

Zest of a whole orange and a nice squeeze of the juice

14 oz. can sweetened condensed milk

Sprinkle of cinnamon

All you have to do is mix all of these lovely ingredients into a bowl until well combined and glossy looking. I like using a jelly roll pan lined with parchment paper. Spread your granola mixture onto the parchment-lined pan so it is nice and even. Place the sheet in a 275° oven for 45-55 minutes or until your granola is looking nice and golden brown. Mmm, can you smell it now? Once your oat-y goodness is finished, let it cool in the pan completely. After it is completely cool you can break it into “granola bark” and store in an airtight container in the fridge.

The nice thing about granola recipes, as we mentioned back in our September granola post, is that you can make yours uniquely your own. Mix it up with different dried fruits, nuts, and spices. Your options are endless! You can keep your taste buds guessing with every new batch you throw together! Did I mention clean up? It’s a breeze! You are only dirtying one mixing bowl and your jellyroll pan is parchment lined, so you’ll be cruising to the next item on your “To Do List” in no time.

This granola is loaded with fiber, healthy fats, and did I mention antioxidants from the dried fruits?  Talk about an awesome grab and go snack just by itself. You can crumble it and add it to a little fruit and yogurt parfait, top off a bowl of your favorite ice cream, or eat it as a bowl of cereal with milk & fresh fruit. You can be creative in how you dish it out. It’s great for a little gifty item for friends as well. Make sure you include the recipe if you decide to package it up. You’ll save yourself from having to write it up for your friends after they try this tasty treat!

    Thank you for this recipe! We eat a ton of granola at my house and it can get so expensive. I will definitly be making this tonight!

      It’s nice when you can use what you have in your cabinets, or if you can buy the ingredients in bulk. It really cuts down on the price. Plus, it’s nice to know what is in your food :)

    Hi, Joanna!

    This sounds wonderful! I just know that Tom will love mixing this together on the weekend for a weekend of “treats”. He’s still in charge of meal-making here, except for the occasional delicious meals brought in by our wonderful neighbors.

    Thanks for all the good recipes, Joanna…keep up the healthy ideas. From this kitchen, we could use a couple more fruity and veggie recipes. I know you have lots of ideas for those of us just getting started on the veggie diet lists.
