Pasta Italiano!

Who’s looking for a little Italiano to cook up?  Nothing beats a quick and easy pasta dish that’s full of flavor and gets you saying mmm! I was on a mission this past weekend to cook up a tasty pasta dish with ingredients we had stocked in the kitchen…I’d like to think I did just that. With a little creativity you can really make any dish pop!

So here is the scoop, I did a little once over on the ingredient choices I had available and decided I would make a penne pasta dish with frozen, cubed butternut squash. Okay, so you are probably thinking, well that doesn’t sound too special. I haven’t gotten to the good part just yet, or I should say I haven’t “accessorized” this dish yet! With a little browned butter sage sauce, fresh shavings of parm, and a swizzle of delish olive oil, your mouth will be watering in no time!

Butternut & Sage Penne

Penne noodles (I cooked up about 4 servings)

1 cup cubed butternut squash

2 tsp Italian seasonings

¼ cup of butter (1/2 of a stick)

½ Tbsp powdered sage (fresh chopped sage, if you have it)

Shavings of fresh parmesan

Drizzle of extra virgin olive oil

Dash of salt and pepper

Place the butternut squash on a baking pan and sprinkle with the Italian seasonings. Bake at 350° for about 15 to 20 minutes until nice and tender. Cook noodles as package suggests. While the noodles are cooking up, place the butter in a saucepan and cook on medium until it becomes lightly browned. Add sage, salt, and pepper then stir well. Drain noodles and return to pot. Add browned butter sauce and roasted squash. Mix until squash is nicely incorporated and almost melting into the warm noodles. Put the noodle mixture into serving bowls and shave some fresh parm on top and drizzle with a little olive oil.  Your kitchen is going to smell AMAZING!

All of these flavors are going to melt and marry in your mouth. Ryan is usually a marinara or alfredo kind of guy, but he loved this pasta dish. Feel free to explore with different kinds of noodles and ingredients. No need to stick to the exact measurements, I usually eyeball this kind of cooking. This quick and easy meal allows for less time in the kitchen and more time to enjoy your Italian and chitchat about the days events!

    This sounds delicious! I even have a butternut squash sitting with my produce right now. I see pasta in it’s future! :)

    I bought some butternut squash at the grocery store last night with this recipe in mind… I’m a little worried about how receptive Chen will be. At least I can tell him that Ryan liked it! :)
